Cinnamon Apple-Oat Crisp with a Crumbly Butter Topping

An apple crisp offers Thanksgiving dessert without rolling pastry. Thin slices bake beneath a butter-and-oat topping, while a short rest lets the fruit juices settle before serving. The apple filling and oat topping keep the dessert focused on soft fruit and crisp, buttery crumbs.

Original recipe formulation inspired by Thanksgiving desserts. Yields and timings are estimates—use the texture and temperature checks in the instructions.

What you will need

9-inch-square baking dish at least 2 inches deep, two mixing bowls, rimmed sheet pan, foil. Use US measuring cups and spoons.

Ingredients

  • Butter for greasing the dish
  • 2 1/2 pounds apples, weighed before peeling and coring; use a mix of firm sweet-tart apples
  • 2 tablespoons fresh lemon juice
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon for the filling
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon for the topping
  • 1/4 teaspoon fine table salt
  • 6 tablespoons cold unsalted butter, cut into small cubes

Method

Start with clean hands, utensils and rinsed produce. Keep preparation separate from raw turkey and its juices.

  1. Heat the oven to 350°F and butter the baking dish. Peel and core the apples, then cut into slices about 1/4 inch thick. Toss with lemon juice in a large bowl.
  2. Mix the granulated sugar, cornstarch and first teaspoon of cinnamon together, then toss through the apples until evenly distributed. Spread in the dish without compressing them into a solid block.
  3. In the second bowl, combine oats, flour, brown sugar, remaining cinnamon and salt. Rub or cut in the cold butter until the mixture contains both fine crumbs and small clumps. Distribute over the apples, leaving a little space around the edges for steam.

  4. Set the dish on the rimmed sheet pan to catch drips. Bake for 45–55 minutes. Look for browned topping, bubbling juices near the center and apple slices that yield to a thin knife. If the top browns before the apples soften, loosely tent with foil and continue checking every 5–10 minutes.
  5. Rest for 20 minutes on a heat-safe surface before serving. Scoop rather than slice; this is a fruit dessert, not a firm pie. Serve plain, or offer ice cream separately if desired.

Timing and texture

The cut of the apple matters more than a promise of an exact oven time. Thick slices can remain firm after the topping is browned. Assemble and bake the crisp on the day you intend to serve it for the best contrast between fruit and topping; refrigeration softens the crumbs. The oven is 350°F, so it can share a schedule with the dressing, but do not crowd air circulation or assume both will finish together.

Planning the Thanksgiving table

Clear a landing place for the hot dessert before it comes out of the oven. For a festive entrance rather than extra clutter around the baking dish, FORTISVEX’s decorative-flags collection offers a separate decorating task to finish earlier in the day. For a smaller outdoor display, compare 18-by-12-inch garden flags. Before selecting hardware, read the garden-holder sizing guidance and check the flag sleeve and holder dimensions; the guidance is not a promise of current hardware availability.

Storage and ingredient notes

Refrigerate promptly in shallow containers, within 2 hours (1 hour above 90°F), at 40°F or colder. Use within 3 days. Reheat leftovers to 165°F.

Contains wheat and milk; oats may have cross-contact with wheat. No gluten-free claim is made.
