Mushroom-Sage Bread Dressing Baked in Its Own Dish

Bake this dressing outside the turkey so its browned top and tender center can be checked on their own. Mushrooms, celery and sage give plain bread a savory base. The liquid goes in gradually because a dense loaf and an airy loaf will not absorb broth at the same rate.

Original recipe formulation inspired by Thanksgiving side dishes. Yields and timings are estimates—use the texture and temperature checks in the instructions.

What you will need

Two sheet pans, large skillet, large mixing bowl, 9-by-13-inch baking dish, foil, food thermometer. Use US measuring cups and spoons.

Ingredients

  • 1 pound plain unsliced white or sourdough bread, cut into 3/4-inch cubes (about 12 loosely filled cups; use weight as the primary measure)
  • 6 tablespoons unsalted butter, divided
  • 12 ounces cremini mushrooms, wiped clean and sliced
  • 1 large yellow onion, diced (about 1 1/2 cups)
  • 3 celery stalks, diced (about 1 cup)
  • 2 medium garlic cloves, minced
  • 1 tablespoon chopped fresh sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon fine table salt, or less if broth is salty
  • 1/2 teaspoon ground black pepper
  • 2 1/2 cups low-sodium vegetable broth, plus up to 1/2 cup more if needed

Method

Start with clean hands, utensils and rinsed produce. Keep preparation separate from raw turkey and its juices.

  1. Heat the oven to 300°F. Spread the bread cubes on two sheet pans. Bake for 20–30 minutes, stirring once, until dry through without becoming deeply browned. Transfer to a large bowl. Raise the oven to 350°F.
  2. Use 1 tablespoon butter to grease the baking dish. Melt the remaining 5 tablespoons in a large skillet over medium-high heat. Add the mushrooms and cook for 8–10 minutes, stirring, until much of their liquid has evaporated.
  3. Add the onion and celery. Reduce to medium heat and cook for 7–10 minutes, until softened. Stir in garlic, sage and thyme for the final minute. Remove from the heat and fold the vegetables, salt and pepper into the bread.
  4. Pour over 2 1/2 cups broth in three additions, folding gently between them. Let stand for 5 minutes. Squeeze one cooled cube lightly: it should be moist inside but retain some shape. If dry centers remain, add the reserved broth 2 tablespoons at a time. Stop before liquid pools in the bowl.

  5. Spread into the prepared dish without packing tightly. Cover with foil and bake for 30 minutes. Uncover and bake another 20–30 minutes, until the surface is browned and the thick intact central portion reaches 165°F on a food thermometer, with the probe away from the pan and any air pockets. Extend cooking if necessary; color alone is not the safety check.
  6. Rest for 10 minutes before scooping. This recipe is for a separate baking dish, not for filling a raw bird. Do not partially bake it for later completion.

Timing and texture

For advance prep, dry the bread and cool it completely before keeping it covered at room temperature overnight. Cook and refrigerate the vegetables separately up to a day ahead. Combine with broth just before baking; chilled vegetables may lengthen the bake, so use the center temperature. Do not leave moistened dressing waiting at room temperature.

Planning the Thanksgiving table

Do the entrance setup before mixing the moistened bread. A seasonal design from FORTISVEX’s decorative-flags collection can welcome guests outside while the serving area stays clear for hot dishes and oven mitts. For a smaller outdoor display, compare 18-by-12-inch garden flags. Before selecting hardware, read the garden-holder sizing guidance and check the flag sleeve and holder dimensions; the guidance is not a promise of current hardware availability.

Storage and ingredient notes

Refrigerate promptly in shallow containers, within 2 hours (1 hour above 90°F), at 40°F or colder. Use within 3 days. Reheat leftovers to 165°F.

Contains wheat and milk; bread or broth may contain additional allergens. No egg is added, but read bread labels.
